Tofu and Vegetable Skewers With Peanut Sauce
These tofu and vegetable skewers with peanut sauce are a delicious and healthy plant-based meal option. Learn how to make these tasty skewers and enjoy a flavorful dish perfect for any occasion.
Supplies
Ingredients:
- 1 block of extra-firm tofu, cubed
- Assorted vegetables (bell peppers, zucchini, mushrooms, cherry tomatoes)
- Wooden or metal skewers
For Peanut Sauce:
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon maple syrup
- 1 tablespoon rice vinegar
- 1 clove garlic, minced
- Water (as needed to thin)
Skewering Tofu and Vegetables
Thread tofu cubes and vegetables onto skewers.
Grill or Bake Skewers
Grill or bake skewers until tofu is golden brown and vegetables are tender.
Prepare Peanut Sauce
In a small saucepan, combine peanut butter, soy sauce, maple syrup, rice vinegar, and minced garlic.
Blend and Adjust Sauce
Heat over low heat, stirring constantly, until smooth and creamy. Add water as needed to thin the sauce to desired consistency.
Serve With Peanut Sauce
Serve skewers with peanut sauce for dipping.
