Neapolitan Pizza Dough Recipe Using a Dough Mixer
Making authentic Neapolitan pizza dough is easier than you think, especially with a Dough Mixer. This simple recipe will give you soft, airy dough perfect for your wood-fired oven.

What You’ll Need:
- 11lbs Italian Flour “00” (like Caputo 00 or Molini Pizzuti)
- 3.25 quarts of cold water (55°F)
- ½ oz of Fresh Yeast
- 5 oz of Salt
Steps to Make the Dough:
- Pour the water into a dough mixer.
- Add the yeast to the water and stir until it dissolves.
- Start the Dough Mixer.
- Gradually add the flour
- Put in about 80% of the flour within the first 2 minutes of mixing.
- Add the salt once most of the flour is in.
- Keep mixing for about 15 to 20 minutes until the dough is smooth and elastic.
Thats it! Your dough is ready to rest and rise.
